Reminds us of Hibiscus tea with honey and lime

Smallholders around the area deliver ripe cherries to the factory during harvest. Upon arrival, the coffees are sorted and passed through a disc pulping machine that removes the skin and pulp off the cherries. After this process, the coffees are graded by density into 3 grades. The top 1 and 2 grade coffees are processed separately and fermented for 16- 24 hours under cover. After washing the coffees in clean channels, they are soaked with local spring water for another 16-18 hours. Finally, the coffees are dried and manually rotated on raised beds for another 21 days. The resulting coffee is distinctly sweet, clear, and sparkly.
