Our House Czech pilsner. 100% Saaz hops. Floor malted pilsner malt. Lagered in our oak foeders as they did in the Germanic caves of old.

VALHALLA

wild pale ale (5.0%)

Our house wild pale ale, Valhalla is a marriage of wild yeast and aggressive hop usage. Brewed with wheat malt, flaked wheat, and 2-row malt, Valhalla is fermented with a blend of wild yeast strains, and double dry hopped during fermentation.

BELSNICKEL V2 

winter ale (6.4%)

Belsnickel is a barrel fermented, dark Belgian ale spiced with orange peel and cinnamon. Brewed with barley malt, dark wheat malt, Munich, and special B.

Belsnickel was hopped with noble hops and spiced in the boil as well as in the barrel. Fermented in Basil Hayden Bourbon Barrels

FUNK JUICE V18

smoothie sour with blackberry and raspberry (5.0%)

Funk Juice was brewed with wheat and oats, and co-fermented with lactobacillus and kveik yeast. After fermentation, Funk Juice V18 was blended with blackberry and raspberry.

Lager made with our friends at Superflux. Skagit Valley Pilsen Malt and Hersbrucker hops.

BOOTSY 

farmhouse ipa (6.75%)

Brewed with oats and raw wheat, Bootsy was fermented warm on a blend of saison and fruit forward Brettanomyces, and generously dryhopped with Mosaic and Simcoe hops.

JUNO 

dry hopped sour (6%) 

Raw wheat, oats, and lactose. Soured and co-fermented with our house mixed culture. Generously dry hopped with Sabro then conditioned on blood orange, guava and vanilla.

bourbon barrel aged imperial milk stout (10.5%)

Black velvet. Dark chocolate. Rich & complex.⁣Aged for nine months in Basil Hayden bourbon barrels.

SELAH V2 

brett lager (5.5%)

Version 2 of Selah, a lagerbier with Brettanomyces, was brewed with Skagit Valley Pilsen malt and flaked rice. Selah was krausened with brettbier (a house ale with Brettanomyces), and lagered for four weeks. Mildly funky, extra crispy.

PASTICHE 

traditional berliner weisse (3.3%)

Available three ways: unadulterated, with mandarin syrup, or with dill syrup.

⁣⁣⁣⁣Pastiche is a traditional style berliner weisse, brewed with Pilsner malt and raw wheat, and without the boil or any hop additions. Pastiche was then fermented with two strains of Brettanomyces from Escarpment Labs - B. Bruxellenis and B. Anomalus - both of which were cultured from old bottles of traditional German berliner weisse. In Germany, berliner weisse is typically served one of three ways: unadulterated, with raspberry syrup (himbeersirup), or with Woodruff syrup (waldmeistersirup). We have two housemade syrup options: cranberry syrup, or dill syrup!⁣⁣

Our house lager is a Bavarian-style pils, step-mashed with an heirloom malt from the Skagit Valley. Premium, new school hops. Natural carbonation.
